Join us on September 30th for Visit Vacaville’s Farm to Table Dinner. A five course meal curated by some of your favorite local chefs. This dinner uses locally sourced ingredients from farms and meat vendors in Solano County. This experience includes a dinner cooked by Lindsey from BackDoor Bistro, Andy from Buddha Thai, Roline from Roline’s Uniquely Filipino, John from Mäksē Restaurant, and Michael from Hank & Hazels. Special wine pairings from Tolenas Winery, King Andrews Vineyards & Back Road Vines. Coffee service will be provided by Attalus Coffee. All the greens for the dinner are provided by Gotham Greens. During the dinner elegant and classy evening Jazz will be performed by Vacaville's very own jazz Vocalist Brette Alana Stout with The James Malone Trio.

Andy graduated with a Bachelor's degree in Hotel and Restaurant Management from Bangkok Thailand and won a scholarship in Hotel and Restaurant Management in Knokke, Belgium. He is the Chef and Owner of Buddha Thai Bistro and Rice Barn Thai Eatery and Wine Bar.
Mäksē Executive Chef John Johnson was raised in Alabama and went on to bring his culinary skills to places such as Noma, 3 Michelin Star Scandinavian restaurant in Copenhagen, to various places in Peru, Jacksonville, Florida, then to the Napa Valley Wine Train as Lead Chef over the daily specials. Chef John joined the Mäksē Family in April 2022.
Vacaville native, Chef Lindsey Chelini, graduated from Vacaville High School and received her business degree from Humboldt State University. Raised in a culinary environment with a father who is an award winning vintner, it was a natural step for Chef Lindsey to explore the culinary arts. After graduating from St. Helena’s Napa Valley Cooking School, she received a position at Calistoga’s prestigious Solbar at Solage Resort, a Michelin Star Restaurant, where she worked for three years. Dreaming of one day owning her own restaurant, she spent time catering for her father’s wine business and per request. After operating a “pop-up” restaurant for just under a year, Chef Lindsey coined the name BackDoor Bistro and she opened a brick and mortar location.
Chef Michael has a passion for food and a devotion for creating unique and tasty dishes. Michael was born and raised in Houston, Texas, but it was not until living in Europe that he caught the cooking bug and began recreating some of their dishes as a hobby. Michael’s professional cooking career began at Tally’s Silver Spoon in Rapid City, South Dakota. He worked his way up through every station in the kitchen brigade, quickly becoming a Sous Chef. In 2020, Michael’s cooking skills were quickly validated when he went to work at the Michelin Star restaurant, La Toque, in Napa. The second wave of restaurant shutdowns in 2020 brought Michael and Hank & Hazel’s Really Good Sausages together. Michael’s passion for creating beautiful and tasty dishes from local produce vendors such as Lockewood Acres and Brazelton Farms, quickly turned Hank & Hazel’s into a culinary delight for patrons. The abundance of locally grown produce inspired Michael to make delicious creations, making sausage the star of the plate. His creativity in preparing the best ingredients, enhanced through cooking, inspired his audience, and likewise inspired him to continue to experiment with food. Michael credits his success with having a great team at work, and a loving and supportive family at home. Michael states simply, “I couldn’t do it without them.”
Chef Roline Casper came from humble beginnings. Being raised by a single working mother, she spent most of her time during the summer in her lola’s (grandmother’s) kitchen in the Philippines, where she was cooking savory dishes for her visiting grandchildren. While being her grandmother’s kitchen assistant and official taste tester, she developed an appreciation for the hard work put into dishes and desserts. She graduated valedictorian from the Napa Valley Cooking School in St. Helena under Chef Barbara Alexander with an emphasis in classical French cooking. Her first book, “The Easy Filipino Cookbook: 100 Classics Made Simple”, which was released in March 2020, was a #1 New Release on Amazon. Her cookbook was included in comedian/actor Jo Koy’s Easter Sunday movie press kit, which was given to his friends and fellow celebrities alike. In 2022, she was part of Solano County’s “Groundbreaking Women” representing Filipinos alongside other New York Times bestselling Asian American women authors. Chef Roline is a guest instructor at her alma mater under Chef Elena Sirignano and is Travis Air Force Base’s 1st Filipina Honorary Commander. Chef Roline is an advocate for Filipino representation. The dishes that she creates are reminiscent of her childhood, her travels and is inspired by those she met along the way. Besides cooking, traveling and spending time with her family, Chef Roline enjoys giving back to others and working behind-the-scenes with various charitable and nonprofit organizations.
