Waitte is the founder and vintner/owner of Tamber Bey Vineyards. His wine passion started in college, evolving from a high-tech career to Napa Valley vineyards. Mentored by icons like Robert Mondavi, he co-manages with wife Jennifer, supporting community causes via the Waitte Foundation.

First Course: Sauvignon Blanc

Pairing Goat Cheese Crostini: Herbed goat cheese crostini with lemon zest drizzle, complementing the wine’s acidity and herbal notes.

Second Course: Chardonnay

Pairing Cucumber Slice with Greek Hummus and Kalamata Olive: Fresh cucumber slices topped with creamy Greek hummus and a single Kalamata olive, highlighting the wine’s guava and peach notes with a light, refreshing balance.

Third Course: Pinot Noir

Pairing Pork Belly & Scallops: Crispy pork belly paired with seared scallops, finished with a brown sugar soy glaze and apple accents, complementing the wine’s earthy and cherry notes with sweet-savory depth.

Fourth Course: Cabernet Sauvignon

Pairing Filet Medallions with Blue Cheese, Garlic Roasted Mashed Potatoes & Veggies: Grilled filet medallions topped with mild blue cheese, served with roasted vegetables and a Tamber Bey Cabernet Sauvignon reduction, amplifying the wine’s black fruit and cassis in a balanced portion.

Fifth Course: Rabicano Red Blend

Pairing Raspberry Chocolate Pots de Crème: Rich, velvety chocolate pots de crème infused with fresh raspberry purée, to enhance its smooth texture and complement the wine’s vanilla and spice notes with a tart fruit accent.
